The Talent Behind Greystone’s Table

Meet the team behind Greystone’s table: Executive Chef Cameron Woodhouse and Head Chef Théo Dubost. Together, they bring a dynamic partnership to the kitchen, crafting menus that celebrate North Canterbury’s local bounty while inspiring one another to push the boundaries of culinary creativity.

Cam and Théo first crossed paths at Inati, where they worked together for two years, honing their synergy and passion for bold, seasonal cuisine. Now, with over two years of collaboration here at Greystone in Waipara, they’ve built a unique kitchen dynamic that thrives on shared respect and inspiration. “Having someone like Théo to bounce ideas off is incredible,” says Cam. “We challenge each other, but it’s always about making the food better and delivering something special for our guests.” Théo echoes the sentiment: “Cam’s creativity and precision inspire me every day. We’re constantly learning from each other, which makes the kitchen an exciting place to be.” Their shared commitment to using the finest local ingredients and cooking with the seasons is at the heart of every dish they create.

From Cam’s background at renowned establishments like the Gleneagles Hotel and Amisfield to Théo’s Michelin-starred training in France, their combined experience brings depth and innovation to Greystone’s menus. Each dish is designed to align with Greystone’s ethos of organic, regenerative practices and perfectly complement Dom and the team’s winemaking philosophy. “We love playing with how wine and food complement each other,” says Cam, “creating dishes that might surprise you and spark new experiences.”

Please note, for parties of 7 or more, a credit card is required to make a reservation. A charge will be made in the event of a cancellation occurring within 48hrs prior to the booking. In the event of a booking decreasing in numbers, unless notified prior to arrival, a $45 per person will be charged to the card on file.
