I sat down with Dom Maxwell, Greystone’s Winemaker of 20 years to chat more about the club-only wines that he has been producing.
Me: Could you share the inspiration behind creating exclusive wines for the wine club?
Dom: There are so many micro stories to tell from Greystone vineyard. Expressing exclusive areas within the estate, sometimes using untraditional winemaking methods allows us to tell very particular stories in the bottle. The batches are purposefully tiny, mere glimpses of offerings that are both rare and unique. As wine club members you’re exactly the sort of people we want to take on this journey with us. We look forward to your feedback!
Me: How do you decide which wines to make for the wine club?
Dom: With such a diverse vineyard there are many batches of fruit that are incredibly unique, yet very small in size – often one- or two-barrels worth in volume. Being this size makes it impractical to send into a general market as there is barely enough to keep on a few restaurant’s wine lists for a season. This has all changed with the wine club dedicated offering – we can now bottle these as we’ve always wanted to and send them direct in small volumes to those most connected with Greystone.
Me: Can you tell me a bit more about the three-wine club exclusive wines that have already been released?
Dom: Our first ever bottling of Cuvé Sauvignon Blanc is 100% fermented and aged in large format French Oak Cuvé. A cuvé is like a very large barrel – in fact in this case it’s the equivalent of 26 barrels in volume. However the vast majority of this becomes an important part of our Greystone Sauvignon Blanc blended with smaller barrels. The Cuvé is only from the large format oak vessel. The size of the vessel reduces the amount of oxygen that makes its way into the wine by a reduced surface area contact. This brings a renewed line of energy to the wine providing a long and flavoursome palate. We’re very selective about the fruit that goes into this vessel as well. Using our Loire clone Sauvignon Blanc vines to provide the fruit for this batch. Loire clone fruit is small in size, riper in flavour and quite textural, when compared to the more widely planted MS clone of Sauvignon Blanc in New Zealand.
Our Gewurztraminer makes up a tiny corner of Block 4 – sitting quietly at the bottom of the main hillside at Greystone vineyard. Exposed to north west winds and situated on dense clay soils over limestone these vines genuinely have to work hard each season. We give them as much love and care as we can to assist them through the season and the result is some of the most textural and perfumed fruit you will ever taste at harvest time. It is purely sublime and hard to keep our hands off. With fruit so gorgeous we choose to tend to the wine with a slow and artisanal approach. Foot treading and allowing the skins to steep in the fresh grape juice overnight brings a richness of texture to the wine. We allow the wine to ferment over many months in old French Oak barrels through to an end style leaving just a lick of fruit sweetness. Slightly hedonistic but beautiful as a food pairing option this has always been a staff favourite.
Situated on just over half a hectare of ground grows the Greystone Syrah vines. Nestled into the northwest facing crease of the hillside this block is not only steep but sitting on the hallowed sandstone and limestone soils, evidenced in the fossils found embedded in rock at the top of the block. This soil mix brings aromatic beauty and long line of flavour. Picked at the end of harvest as Autumn is well and truly upon us, the fruit is naturally fermented on skins for 30 days. This first release of wine club Syrah was aged for an extended time in French Oak barrels of 20 months – contributing to a seamless and harmonious feel throughout the palate. A lovely example of balanced cool climate Syrah.
Me: Lastly, could you give us any hints about the upcoming wines for our wine club members?
Dom: Well, it does depend a bit on the whim of the winemaker, but I can tell you…
A tiny bottling of single block Chardonnay or two. Old vine Chardonnay and a high elevation Chardonnay are both contenders – we may opt for both!
A single block dry Riesling made from Block 7 – which we affectionately refer to as the Regen block because of the regenerative viticulture approach we take in this part of the vineyards.
A single block Vineyard Ferment Pinot Noir also from Block 7 (see above.
A Vineyard Ferment Syrah (yes that’s right!).
