Meet Chef Théo, the culinary maestro behind our acclaimed Cellar Door menus

Chef Théo Dubost, who leads the culinary team here at Greystone’s Cellar Door, is renowned for his creative flair and dedication to showcasing the best of local, seasonal produce. His passion lies in sourcing the freshest ingredients from the region and cooking within the season, not only for their superior taste but also for their positive impact on the environment.

Inspired by nature, Chef Théo believes in utilizing every part of the ingredient, including butchering our own sheep and sharing the cuts in a nose-to-tail approach. This commitment to sustainability and respect for nature is evident in every dish, offering guests an unforgettable culinary experience that honors the flavors of the land.

Chef Théo brings the same intensity to life that he does to his cooking. When he’s not in the kitchen, you’ll find him with grease on his hands, fixing up engines, or out with friends at concerts & gigs. He’s got a thing for road trips and motorcycle races, and he’s always on the hunt for a meal that’s anything but ordinary.

Please note, for parties of 7 or more, a credit card is required to make a reservation. A charge will be made in the event of a cancellation occurring within 48hrs prior to the booking. In the event of a booking decreasing in numbers, unless notified prior to arrival, a $45 per person will be charged to the card on file.
